Chef Ebru Baybara Demir came together with students and academics at Yale University as part of the Global Table Fellow program and made presentations on Turkish cuisine and social gastronomy projects. In the program, six special dishes selected from Türkiye's rich culinary culture were brought to Yale kitchens. The most striking flavor was Turkish Bulgur, which is almost unknown in Europe and America.
Global Table is a collaboration between the Yale MacMillan Center, Yale Schwarzman Center, and Yale Hospitality that aims to illuminate the connections between sustainability, health, culture, and community.
